Grapes are directly pressed to create a white juice. Whole clusters of Chardonnay Chenin Blanc Sauvignon Blanc are thrown in to macerate infuse (flotation method) for 1 2 weeks before pressing (ergo the cuve's name 'dip' as in to take a dip). Spontaneous fermentation and aging in tank prior to bottling unfined, unfiltered, no additional SO2.
